Not to mention QUICK! Which is perfect for busy people who have large(r) families.

INGREDIENTS:CHICKEN/BROTH
1 tsp cumin
1 tsp chili powder
1 1/4 tsp smoked paprika
1 tbsp chopped garlic (can use 4 cloves chopped instead)
2 tsp salt (or to taste)
1/3 cup marinated roasted red peppers (chopped into large chunks )
2 lbs ground chicken (or other protein of your choice)
INGREDIENTS: SAUCE
Chicken broth from above
1/2 tsp sweetener (I used stevia)
1 can (14.5 oz) fire roasted diced red peppers in olive oil marinate
1 can (12 oz) tomato paste
Water (I filled 12 oz can)
1/4 cup red wine vinegar
1/8 cup hot sauce
Dash of crushed red pepper flakes
*Zucchini Noodles (premade or you can make them yourself) Here is the brand I have from Sam's Club
We usually make our own Zucchini noodles using this awesome little tool right here!
