Ok, so who doesn't enjoy cookies? What makes cookies better? Healthy cookies that don't skimp on flavor! So check out my quick and easy oatmeal cookies that are guilt free, flour free and gluten free! YESSS. I got you lady!
Watch this quick video for a visual - NOTE - you can substitute the oatmeal for gluten free oatmeal. Here's one that I use often - Bob's Red Mill Gluten Free Old Fashion Rolled Oats.
Ingredients
3/4 cup oats - regular or gluten free
1 large egg
1/4 cup applesauce unsweetened
1 TBSP almond butter
1/4 cup fresh blueberries (or other fruit)
1 cap full of vanilla extract
Optional Ingredients
Dash of ground cinnamon
Dash of sugar substitute. I enjoy this one - Stevia
Yield: 6-7 cookies
Calories for all cookies -481 if using gluten free oats
Calories for all cookies - 436 if using regular oats
Steps
Preheat oven to 350 degrees F
Mix oats, applesauce, almond butter together in small bowl
Mix in egg and vanilla extract
Add optional cinnamon and or sugar substitute
Fold in blueberries
Spray baking pan with non stick cooking spray
Use tablespoon to scoop out 6 to 7 cookies
Flatten and form into circular shapes
Bake for 20 minutes and then leave on baking sheet for 2-3 minutes
Remove from baking pan and cool then serve. I like to enjoy mine with coffee or tea.
Storage- I usually eat them all in 1 sitting! They are so yummy! You can store them for 1 - 2 days in an airtight container with a slice of bread to help keep them moist.
You can also make the mix and leave overnight so you can quickly bake them without prep time.
Try freezing the mixture also. Might as well, they are so tasty!
